Avocados are delicious, whatever way you eat them. But if you’re anything like me, you don’t like how fast they turn, even though the brownness doesn’t really detract from the taste. Leave a cut avocado in your fridge, and within a day it begins to turn a brown-grey color — a far cry from the vibrant green-yellow of the day before! Why is that?! Well, it’s all about oxidation, but it doesn’t have to be this way!
